On a knife’s edge is exited to announce that we are now selling a range of knives to make cooking even easier and more fun. No matter if it is a gift for someone else, or to add to your personal collection, the initial range will cater for any occasions. All knives have been selected for their performance and beauty, and if treated correctly they will provide reward you for generations. If you are used to western style knives such as Global or WÜSTHOF then you will find the step up in performance makes a massive difference. It is worth noting that if you do a lot of heavy cutting, such as working with bones, pumpkins or other hard foods that the softer, but tougher edge of a western style knife might still be right for you as it is less likely to chip when used in these situations.

Initially the knife styles that will be carried are

  • Nikiri - This is a vegetable knife, generally thinner and with a straight edge perfect for a push motion cut
  • Gyuto - This is very similar to a traditional chefs knife, with a curve on the edge for rocking motion as well as push cutting, the work horse in the kitchen
  • Pairing - This is a small knife for all those little jobs, pealing and slicing an array of produce

Hatsukokoro

The Hatsukokoro range provides a high quality Japanese knife with superior SG2 powered stainless steel. This steel will hold a sharper edge for longer than VG10, but require less attention than HAP40. The blade has a stainless cladding with an incredibly beautiful damascus pattern, along with a teakwood wa handle.

Sentan

Sentan knife

Sentan HAP40 Using HAP40 powder steel core, and stainless classing, the Sentan range provides the hardest edge we offer at this point. That hardness means that your knife will stay sharper for longer, and will also be able to take on a finer sharper edge. HAP 40 is classified as a semi stainless steel so care needs to be taken to dry off after use, and never leave it wet in a sink. A patina will form on the edge over time, this is a normal for this type of steel.

Shun Classic and Shun Classic White The Shun classic range is not only beautiful with a damascus cladding, but also keeps its edge longer thanks to the use of VG10 stainless steel. The D shaped handle feels comfortable for extended periods of use, and is available in both black or white handles.

Masutani VG10 damascus The Masutani range provides a knife with a very thin blade for a great sharp edge, the blade is also finished with beautiful damascus cladding.
